Housemade Bulk Italian Sausage

I love Italian sausage. I have bought it from every kind of butcher you can think of, from the independents to the big chains. I use Italian sausage in spaghetti sauce, omelette’s, alongside eggs, and on pizza. It can get expensive and so imagine my glee when I came across this awesome recipe from my friend, and guest blogger Joshua McNichols (recently co-author of “The Urban Farm Handbook“) for homemade bulk Italian Sausage you can ALWAYS have available in your freezer!

Feel free to experiment with other herbs and spices, but don’t forget that fennel!

Housemade Bulk Italian Sausage

Ingredients

  • 4 pounds ground pork
  • 1/2 cup red wine
  • 4 garlic cloves, minced
  • 1 tbsp black peppercorns, freshly ground
  • 4 tsp sea salt
  • 1 tbsp dried or 3 tbsp freshly minced oregano
  • 1 tbsp dried or 3 tbsp freshly minced basil
  • 1 tbsp dried fennel

Instructions

  1. Combine all ingredients and mix thoroughly.
  2. Divide into 4 portions and freeze until needed.
