How to Sear and Bake a Steak

Step 1
Take the steak out of the refrigerator and bring to room temperature on a plate.
Step 2
Coat the steak with canola or vegetable oil (olive oil can turn rancid over the high heat for this method) and season both sides of the meat with salt and freshly ground black pepper.
Step 3
Place the cast iron skillet in your oven and heat it to 500 degrees.
Step 4
Remove the skillet with a baking mitt when the oven reaches 500 degrees, but do not turn off the oven.
Step 5
Put the skillet on the stove top over high heat and place the steak in the middle of the skillet. Cook the steak for 30 seconds without moving, then flip and cook for an additional 30 seconds.
Step 6
Place the skillet in the oven and cook the steak for 2 to 3 min. Flip the steak and cook for an additional 2 to 3 min. Cooking for 2 min. per side will result in medium rare steaks, while cooking for 3 min. per side will yield a medium steak.
Step 7
Remove the steak from the oven and place it on a clean plate. Cover the plate loosely with foil and let the meat rest for at least 5 min, 10 preferably. Then sprinkle with a little more sea salt if desired.
Step 8
Serve immediately while the steak is still warm, or chill and serve sliced on a salad.
